easy asian

so, I have to admit. I am not a great cook. So, I will add something easy, quick, and pretty darn good that I made last night ( shit I make it a lot of nights) when I am alone and in a hurry. 

Cooked Rice (I use white or brown in the cooker, but make it as you wish).
Dry seawood sheets (Get it for CHEAP at the asian grocery store. I also have the smaller lunch-sizes in my desk for snacks at school).
Egg with lots of spices.
Sprouts, peppers, bok choy, whatever veggies you have lying around. 

Mix the egg, veggies and rice. 
Scoop into sheet and roll up to make egg/rice/seaweed tacos.
SOOOO yummy.

good things to add

As far as I'm concerned, you really can't go wrong with one or all of these secret ingredients:

fresh mint leaves,
peach schnapps,
pomegranate seeds,
lime juice, 
oatmeal.

(also sounds like the fixin's for a damn good drink...
...except for the oatmeal...)

turkey meatballs with cranberry sauce

Baked Turkey Meatballs
1 lb ground turkey
1 white onion (diced finely)
1 small colored sweet pepper (diced)
2 Tbs oregano
1/2 tsp salt
1/2 tsp black pepper
1 egg
1 cup finely blended oats

Mix thawed turkey with onion, sweet pepper, salt, pepper, and oregano. Mix in egg and blended oats. Form into 12 meatballs and place on greased baking sheet. Bake in oven at 425 degrees for 10-15 mins or until cooked through.

Cranberry Sauce
2/3 Cup orange juice
1 Cup cranberries
1/4 Cup sugar

Mix all ingredients and bring to a boil. When cranberries begin popping and sauce thickens it is finished.

Pour cranberry sauce over meatballs and serve with garlic mashed potatoes.

not a recipe

so, this isn't necessarily a recipe but more of a plea for all peoples to eat Basmati rice. I must admit that I'm hooked on this stuff and cannot stop praising it. Here are the benefits: It's a long grain rice so it looks pretty, it's more fragrant than traditional rice, it takes less water than traditional rice, and it cooks faster than regular white rice. The grains of Basmati rice are much longer than they are wide, and they grow even longer as they cook. They stay firm and separate, not sticky, after cooking.

2 cups white Basmati Rice
3 cups water (maximum)
salt

Bring to a boil, cover, and turn heat on low for 10 minutes.

Egg salad sandwich

Tonight Todd made Egg salad sandwich and potato salad for dinner. Delicious. His secret? Sour Cream. 

Hardboiled Eggs
Dill
Sour Cream
Mix and serve with toasted wheat bread and plum tomato cut. 

Red skinned potato (slightly cooked)
sliced moon cucumbers 
dill
olive oil
various italian seasonings

watermelon for dessert. amazing.

Chunky Monkey

Slice a banana into 1/2 inch rounds and place into a bowl.
Cover with your favorite granola. (I use GoLean)
Microwave some peanut butter so it is easy to mix. (about 30 sec)
Add a good squirt of honey to the peanut butter and mix together.
Pour peanut butter and honey mixture over granola.
Enjoy!

This makes a GREAT snack or dessert. Kids love it!

Black Bean Salsa

1 14oz can ob black beans drained & rinsed
1 small can of shoepeg corn, drained
2-3 roma tomatoes diced
1/3 cup cilantro chopped
1-2 avocadoes diced
Juice from 2-3 fresh limes
1/4 cup green onion
¼ tsp of kosher salt
Dash of cumin
